Blueberry Chocolate Chip Granola Bars are a delicious, no-bake recipe.  They make a wonderful, energizing snack.

My kids love homemade granola bars.  I love that they’re an easy snack to make, and that I get to control the ingredients that go into them.  I can make them healthier by adding extra nuts and seeds, or I can make them more decadent by adding chocolate chips.

I love putting dried fruit into our granola bars, like these Blueberry Chocolate Chip Granola Bars.  They make such a treat.  They aren’t something we have around all the time, but whenever I make them, my kids get so excited!

Do Blueberry Chocolate Chip Granola Bars have to be baked?

Nope!  That’s the best part of this recipe.  This recipe makes a no-bake granola bar.  Just mix up the ingredients, press into a pan, and refrigerate until set.

Do Blueberry Chocolate Chip Granola Bars need to be stored in the refrigerator?

While these granola bars would probably not spoil at room temperature, they would soften.  And when they soften, they can be pretty messy.  The cold of the fridge helps them keep their shape.

What substitutions can be made in this recipe?

The peanut butter can be swapped out for almond butter, sunflower butter, or cashew butter.

The butter can be substituted with coconut oil, if you’re dairy free.

Yield: Makes 18 granola bars

No Bake Blueberry Chocolate Chip Granola Bars

Blueberry Chocolate Chip Granola Bars are a delicious, no-bake recipe.  They make a wonderful, energizing snack.

Total Time 10 minutes

Ingredients

  • 3 1/2 C oats, divided
  • 1/2 tsp salt
  • 1 C peanut butter
  • 1/2 C butter or coconut oil, melted
  • 1/2 C honey
  • 1 C dried blueberries
  • 3/4 C semi-sweet chocolate chips

Instructions

  1. Line a 9x13 pan with parchment paper.
  2. In a food processor, blend 1/2 C. oats and salt for about one minute, until processed into small pieces. Add peanut butter, butter or coconut oil, and honey, and blend until smooth.
  3. Transfer this mixture to a large bowl.
  4. Stir in remaining 3 C. oats. Then stir in remaining ingredients.
  5. Press mixture into parchment paper lined pan, pressing down to make even.
  6. Refrigerate for one hour, or put in the freezer for 30 minutes.
  7. Cut into 18 pieces.
  8. Wrap each bar in parchment paper and keep in an air tight container in the fridge***.

Notes

***We have taken these from the fridge for our lunches on the go, and they've been fine. They still retained their shape and taste about 4 hours after removing them from the fridge.
