I have been on a Caprese kick lately. My basil in the greenhouse has taken off (growing basil is so easy!). And I am loving having it just out the back door.  I have had pesto to my heart’s delight.

The classic Caprese salad is amazing with fresh basil, and I’ve even made a phenomenal Grilled Caprese Sandwich.

I thought I would combine one of The Hardworking Husband’s favorite foods with one of mine this time, by making Caprese Pizza.

This pizza combines several things I make myself – ricotta, mozzarella, and pizza crust. If you are wanting to make these things yourself, you will need to start a few hours before you need them.  

Earlier this week, I showed you how to grow your own tomatoes. This pizza is over the top with homegrown tomatoes.

Caprese Pizza

Caprese Pizza is a combination of a Caprese Salad and a Pizza. It is a delicious light pizza with fresh tomatoes, mozzarella, ricotta and basil.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1 pizza crust
  • 3 Tbsp olive oil, plus more to drizzle at the end
  • 2 cloves garlic, minced
  • 1/4 cup mozzarella, shredded
  • 6 oz grape tomatoes, sliced in half
  • 1/4 cup ricotta
  • 2 Tbsp basil, sliced in ribbons.

Instructions

  1. Preheat oven according to the directions for the pizza crust.
  2. Spread pizza dough out on a sheet pan.
  3. In a small bowl, mix together olive oil and garlic. Spread olive oil mixture on pizza crust.
  4. Sprinkle mozzarella over the olive oil mixture.
  5. Spread tomatoes around the pizza.
  6. Spoon ricotta on the pizza.
  7. Bake until pizza crust is golden brown (depends on crust but about 15 minutes).
  8. Drizzle with olive oil and sprinkle basil on top.
  9. Slice and enjoy!
