Carrot Cake Trifle is a delicious twist on carrot cake. The cream cheese layer takes cream cheese frosting to another level.
I have grown to love trifles. While my trifles aren’t a true English trifles, they are the concept of trifle. And who really cares if they are delicious.
So what makes a trifle a trifle?
A true English trifle has sponge cake that has been soaked in fruit and sherry and has a real egg custard layer. For me a trifle is a cake layer with a custard or frosting layer. It could also have other layers like fruit or crunchies.
Can you make a trifle the day before?
Yes you can make it the day before. And actually it might taste better. It will give it time for the flavors to meld.

Carrot Cake Trifle
Ingredients
Carrot Cake Layer
- 2 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 4 eggs
- 3 cups raw grated carrots (about 1 lb)
Cream Cheese Layer
- 8 oz cream cheese, softened
- 3/4 cup butter, softened
- 1/8 tsp nutmeg
- 1/2 tsp cinnamon
- 3 cups powdered sugar
- 2 cups heavy whipping cream
Instructions
Carrot Cake Layer
- Preheat oven to 350.
- Spray 9x13 pan with cooking spray and line with parchment paper. Spray parchment paper. Set aside.
- In your mixing bowl, add flour, baking soda, salt, cinnamon and nutmeg. Mix together with whisk attachment until blended
- Add sugar and oil and mix until mixed in.
- Beat in one egg at a time.
- Add carrots and mix until blended.
- Pour batter into prepared pan.
- Bake for 25-30 minutes or until cake pulls away from the sides of the pan slightly.
- Cool completely.
- Take cake out of pan. Cut cake into 1 inch cubes. Set aside.
Cream Cheese Layer
- In mixer with paddle attachment, blend cream cheese and butter until smooth
- Add powered sugar and mix until blended.
- Add nutmeg and cinnamon, mix until combined.
- Set aside.
- In mixer with whisk attachment, whip heavy whipping cream until you have stiff peaks.
- Add 1/4 of the whipped cream at a time, fold whipped cream into cream cheese mixture gently.
Assembling Trifle
- Place 1/3 of the carrot cake cubes in the bottom of your trifle bowl.
- Spread 1/3 of the cream cheese layer over the carrot cake cubes.
- Repeat 2 more times.
- Sprinkle with shredded carrots if you want.
