All it takes is 3 ingredients and 5 minutes to make this delicious Carrot Craisin Salad!
This is seriously the easiest salad recipe ever. Three ingredients, and five minutes of your time (unless you have to shred the carrots by hand with a grater, and then it might be closer to 10 minutes), and you’ve got a delicious side dish.
My mom made this salad when I was a kid, but she used raisins instead of Craisins. I love the little bit of tang and sweetness that Craisins bring to carrot Craisin salad, so that’s how I make it.
Carrot Craisin Salad is always a big hit at potlucks and BBQs. Plus it’s really cheap to make. Carrots are such a low cost vegetable to add into your diet. The most expensive part of this side dish is the Craisins, but at only 3/4 cup, that’s still really cheap.
If you want to add a bit of crunch to Carrot Craisin Salad, feel free to add in 1/2 a cup of chopped pecans or walnuts. I’ve even used candied walnuts before, and it was amazing!
- 3 cups carrots, shredded
- 3/4 cup mayonnaisse
- 3/4 cup Craisins
- Stir together shredded carrots and mayo.
- Stir in Craisins.
- Serve immediately, or refrigerate up to 1 day. This salad is still edible after 1 day, but the carrots will start to get mushy and it won't look as nice.
