Cheesecake Bars

Rich and delicious Cheesecake Bars don’t require a special pan to make.  Perfect for parties!

Cheesecake is such a delicious dessert.  I love that it can be paired with so many things, from fruit, to chocolate or caramel syrup, to candy bars or cookies. 

Cheesecake is also one of those desserts that a lot of people think are really hard to make, but it really isn’t difficult. 

The hardest thing about cheesecake is that it usually requires a spring form pan.  If you don’t want to buy a special pan just for making cheesecake once a year, Cheesecake Bars are a great alternative.

Cheesecake Bars are also fabulous for a crowd, since one pan makes 15-18 servings.

Cook Time 45 minutes
Total Time 55 minutes


For the crust:

  • 9 graham crackers, crushed
  • 6 Tbsp. butter, melted
  • 6 Tbsp. sugar

For the filling:

  • 5 packages cream cheese (8 oz. each)
  • 1 cup sugar
  • 5 eggs
  • 8 oz. sour cream
  • 1 Tablespoon vanilla extract


  1. Preheat oven to 350º.
  2. In a medium bowl, stir together crust ingredients.
  3. Press into the bottom of a 9x13 ungreased pan.
  4. Bake 8-10 minutes, until golden. While crust is baking, start filling (directions below).
  5. Remove crust from oven and reduce heat to 300º.
  6. In a large mixing bowl or the bowl of a stand mixer, add cream cheese and sugar.
  7. Beat until smoot.
  8. Add remaining ingredients, and beat until smooth.
  9. Pour over baked crust.
  10. Bake 35-40 minutes, until edges are set.
  11. Don't overbake.
  12. Remove from oven and cool on wire rack 1 hour.
  13. Move to fridge and cool at least 6 hours.
  14. Serve with your favorite toppings.
