Cheesecake is such a delicious dessert. I love that it can be paired with so many things, from fruit, to chocolate or caramel syrup, to candy bars or cookies.
Cheesecake is also one of those desserts that a lot of people think are really hard to make, but it really isn’t difficult.
The hardest thing about cheesecake is that it usually requires a spring form pan. If you don’t want to buy a special pan just for making cheesecake once a year, Cheesecake Bars are a great alternative.
Cheesecake Bars are also fabulous for a crowd, since one pan makes 15-18 servings.

Cheesecake Bars

Rich and delicious Cheesecake Bars don't require a special pan to make. Perfect for parties!
Ingredients
For the crust:
- 9 graham crackers, crushed
- 6 Tbsp. butter, melted
- 6 Tbsp. sugar
For the filling:
- 5 packages cream cheese (8 oz. each)
- 1 cup sugar
- 5 eggs
- 8 oz. sour cream
- 1 Tablespoon vanilla extract
Instructions
- Preheat oven to 350º.
- In a medium bowl, stir together crust ingredients.
- Press into the bottom of a 9x13 ungreased pan.
- Bake 8-10 minutes, until golden. While crust is baking, start filling (directions below).
- Remove crust from oven and reduce heat to 300º.
- In a large mixing bowl or the bowl of a stand mixer, add cream cheese and sugar.
- Beat until smoot.
- Add remaining ingredients, and beat until smooth.
- Pour over baked crust.
- Bake 35-40 minutes, until edges are set.
- Don't overbake.
- Remove from oven and cool on wire rack 1 hour.
- Move to fridge and cool at least 6 hours.
- Serve with your favorite toppings.
