Chicken Queso Casserole

Chicken Queso Casserole is a great way to use up leftover chicken and queso.  Bring new life to your leftovers with this kid-approved recipe.

Right now, with grocery prices so high, I’m working extra hard to lessen food waste at our house, and spend less on our grocery budget.  So I decided to try making some new recipes with ingredients in the fridge that needed to be used up.  The first recipe I tried was this Chicken Queso Casserole. 

To say that this recipe was a hit would be an understatement.  The kids took seconds and thirds, and then they fought over the leftovers the next day.

Because this recipe was made using leftovers, it’s a pretty lenient recipe.  If you have more of an ingredient, throw it in.  If you have less of an ingredient, don’t worry about it.  If you want to throw in other ingredients, feel free.  Some ideas that could easily be added are chopped bell peppers, onions, or olives.  You could also add lettuce or tomatoes once it’s done cooking.

Chicken Queso Casserole

Give new life to old ingredients with this delicious Chicken Queso Casserole! Made in less than 30 minutes, it's the perfect weeknight dinner recipe!

Cook Time 20 minutes
Total Time 25 minutes


  • 1 large cooked chicken breast, chopped (about 2 cups)
  • 2 cups queso (I used a white queso)
  • 1 cup sour cream
  • 4 oz. canned chiles
  • 9 oz. tortilla chips (about 3/4 of a regular-sized bag)
  • 1 avocado, chopped
  • 2 green onions, chopped, if desired


  1. Preheat oven to 325º. Spray a 9x13 pan with cooking spray.
  2. In a skillet, heat chicken, queso, sour cream, and chiles until smooth (about 5 minutes).
  3. While the chicken mixture is heating, spread chips out in prepared pan, and top with chopped avocado.
  4. Once chicken mixture is ready, pour it over the chips and avocados.
  5. Bake, uncovered, for 15 minutes.
  6. Top with green onions, if desired.
