As we begin a new year, I wanted to change things up some. I have been doing a series of Cooking & Baking Goals for 2 years now. I didn’t finish last year well. I didn’t complete a goal recipe in October, November or December. I would like to continue challenging myself to make the “hard” stuff, but I just don’t that the desire to do it every month anymore.
As I was doing some brainstorming of what I did want to do, I realized that I have a lot of cast iron cookware but not a lot of recipes that are specifically for cast iron. So I want to work on expanding that part of my cooking and take you along with me.
I have been picking up cast iron pieces at yard sales for several years. Occasionally I find skillets at TJ Maxx on the clearance aisle. If you are anything like me, you have some pieces that really need to be cleaned and reseasoned. (As you can see in the picture above.) I will be sharing how to do that, how to take care of your cast iron along with recipes to make in them.
I have several recipes that I have posted already that can be made in your cast iron. Those are as follows:

I will like following this thread. I bought my first CI piece yesterday..it's just the 8" skillet. It's made in China and the inside is bumpy...not a glassy surface. Should I have my hubby grind it a bit? Is CI made in China safe? I think I'll only buy namebrand ones from now on...rather than worry about it :P Such is the beginners thoughts....:)

I have been searching for an answer for you. I am not sure about the bumpy surface. I believe CI made in China is safe. There are only 2 companies that still make the CI in the US. I'm sorry I'm not more help. I will keep looking for the answer to the bumpy skillet.
