Kerry, Lucy, and I are doing a round of Whole30 right now, trying to get to the bottom of some dietary issues. I’ve been wanting to try going dairy free for years, but I didn’t want to try it enough to actually follow through on doing it. Turns out I really like dairy.
So when Lucy and Kerry told me they were going to do Whole30, I figured it was the right time to give it a try. Having support always makes it easier. And doing the complete Whole30 elimination diet will give me more information than just giving up dairy.
I’ve found that the hardest part of Whole 30 is that there is so much cooking. I feel like I’m cooking all the time. I normally cook most of our meals, but I’ve got my tried and true quick and simple meals that aren’t compliant. So it’s been more work cooking, since I have to cook 3 meals a day, and they’re ones I don’t know well, which means they take a little more time.
I decided I wanted to utilize my CrockPot at least once a week in order to help make the cooking a little easier.
This CrockPot Hamburger Vegetable Soup is easy and delicious.
About the Ingredients in CrockPot Hamburger Vegetable Soup:
Ground Beef: If at all possible, buy grass fed, pasture raised beef. Conventional beef is raised in less than stellar conditions, and typically has antibiotics used. Grass fed will help your body heal.
Tomato Sauce: Make sure to check your tomato sauce for added sugar. Some tomato products have sugar in the ingredient list, while others don’t. Since sugar (and sweeteners) are against Whole 30, you’ll want to make sure you don’t throw off your whole 30 days.
Chicken Broth: Check your broth to make sure it’s Whole 30 compliant. Some broths have additives that aren’t allowed. Or even better, make your own broth, or buy bone broth.

CrockPot Hamburger Vegetable Soup {Whole 30}

Ingredients
- 2 lbs. ground beef
- 1/2 C. onion, chopped
- 4 C. chicken broth **
- 1 can green beans
- 8 oz. can tomato sauce
- 3 carrots, peeled & chopped
- 2 stalks celery, sliced
- 1 tsp. oregano
- 1 tsp. basil
- 1 tsp. salt (to taste)
- 1/2 tsp. pepper
Instructions
- Brown beef with onion and carrots in a skillet.
- Drain fat, and put ground beef mixture in slow cooker.
- Add remaining ingredients.
- Cook on low 6-8 hours.
Notes
** If using canned or boxed broth, check the label to make sure all ingredients are Whole30 compliant. Bone broth (preferably homemade) is the best choice.
