This was my absolute favorite thing my mom cooked when I was growing. My absolute favorite!! This and her homemade tortillas stick in my mind when I think about my mother cooking. Of course when I think of my mother in the kitchen, most of the thoughts involve her baking not cooking. I’m pretty sure she must preferred baking to cooking and once she started working at the post office, my dad, Kerry, and I did a lot of the cooking.
I think this recipe came about because my mom needed more ways to cook potatoes since they were always plentiful growing up in Idaho. This is a super simple recipe and one that your kids will absolutely love! In fact, it’s one of my family’s favorite side dishes.
Favy Taters {Cheesy Baked Potatoes}
– Cut your potatoes in half lengthwise and sprinkle the cut side with season salt.
– Place cut side down on a cookie sheet and rub olive oil, canola oil, or melted butter on the skin side of the potatoes. I used olive oil because that is my favorite.
-Bake at 400 degrees for 20-30 minutes or until cooked through and skin is crispy.
-Flip potatoes back over and cut a horizontal and vertical slit in the potato and place about a teaspoon or two of butter in the slits of the potato and cover the potato with shredded cheese.
– Return to oven and bake until cheese is melted.
And enjoy! Seriously, enjoy! These are fantastic.
