Because I don’t plan meals for weekends, often The Hardworking Husband cooks for himself. He comes up with all kinds of things. He cooks a lot like my dad did. He goes to the store finds things that look good and throws them together.

Sometimes it’s something I would never eat and sometimes it’s really good. Recently he made something with hash brown patties, chili, eggs, cheese and who knows what else. That was something I wanted no part of. He also doesn’t mind preservatives if he’s cooking it. Which is ok. I am slowly swaying him to my side. But he doesn’t want to make everything from scratch which sometimes I don’t blame him.

But a while back he made steak sandwiches that looked really good. He grilled steak, sliced it thin, sautéed onions and bell peppers and put it all on flat bread. Since he enjoyed it so much and it looked edible to me, I decided to recreate it but make the flat bread myself. It ended up being pretty easy. Much better than my attempt at Native American fry bread. (Which I will try again)

Flat Bread
2 3/4 cup water heated to 100 – 110
1 1/2 Tbsp dry active yeast
1 Tbsp salt
1 Tbsp sugar
1/4 cup olive oil
6 1/2 cups flour
Butter & olive oil for pan

Add yeast, sugar & olive oil to warm water in a large bowl. Allow to proof for 10 minutes.

Once yeast has proofed combine flour, salt and yeast mixture until flour is incorporated.

Cover with a clean towel and allow to rise in a warm draft free place until dough flattens on top (1 1/2 – 2 hours).

Using your hands or a large spoon, scoop a handful of dough. Place on a well floured surface. Turn over to coat all sides with flour. Roll out in a circle to 1/16 of an inch.

I need work on rolling them in a circle.

In a large skillet, heat 1 tsp butter and 1 tsp olive oil. Swirl pan to coat.

Place dough in pan and cover immediately this bakes it.

Cook for 2 minutes and then check under side. It needs to be golden brown and bubbly. Then flip and cook until this side is golden brown. Remove from pan. Wipe the pan out before cooking the next bread. Add another tsp butter and olive oil and repeat. If you don’t wipe the pan out, it will mess up the next bread. Repeat until all the bread is cooked.
