Sometimes when I’m baking, I enjoy making a complicated recipe, but sometimes I just want sweet and simple. These Flourless Peanut Butter Cookies are about as simple as you can get.
Made with just 3 common ingredients that you likely have on hand, you can have a batch of cookies whipped up in just minutes. But don’t worry that because the are just 3 ingredient peanut butter cookies they’ll be bland– far from it! They’re packed full of peanut buttery goodness!
Why do peanut butter cookies have fork marks?
I’m sure at some point, we’ve all wondered about the fork marks on peanut butter cookies. Are they integral to the way the cookies turn out? Will the cookies be a flop if they don’t have the classic fork mark lattice?
It turns out that using fork marks for peanut butter cookies, including these flourless peanut butter cookies, was popularized by Pillsbury, starting with their 1933 edition of Pillsbury’s Balanced Recipes.
Because 3 ingredient peanut butter cookies are such a thick dough, if they’re made in a drop cookie they may not cook evenly. In order to make them cook evenly, you can roll them out and cut out the cookies, but that is quite time-consuming. Using fork tines to press them flat solves the problem in less time!

- 1 cup creamy peanut butter
- 1 cup packed brown sugar
- 1 egg
- Preheat oven to 350º.
- In a large bowl, stir together all ingredients until smooth.
- Using an ice cream scoop, scoop cookies onto cookie sheet.
- Use a fork to press a criss-cross shape on top each cookie.
- Bake for 10-12 minutes, until set.
- Cool on a wire rack.
