Make this rich, filling Hash Brown Breakfast Bake for Christmas breakfast, or any morning!  It even makes a great breakfast-for-dinner recipe!

At my house, we love trying new recipes for Christmas morning.  I grew up having crepes for Christmas breakfast.  And while I love crepes, I either make them ahead of time and freeze them (find out how to make and freeze crepes here), or it requires standing at the stove for quite some time. 

So most Christmases, I try a new breakfast recipe, and I have a preference for easy recipes so I can enjoy the time with my family instead of slaving away in the kitchen.  I decided to create a recipe for this year’s Christmas early, since I’ve been in the mood for Christmas early this year.

This Hash Brown Breakfast Bake turns out creamy, cheesy, and delicious.  It would be great with bacon or sausage, and when I make it again I think I’ll add in some diced peppers or a can of green chiles to add a little kick.

Hash Brown Breakfast Bake

Make this rich, filling Hash Brown Breakfast Bake for Christmas breakfast, or any morning!  It even makes a great breakfast-for-dinner recipe!

Cook Time 45 minutes
Total Time 55 minutes

Ingredients

  • 6 eggs
  • 2 cups sour cream
  • 1/2 cup onion, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 1/2 cups cheddar, shredded
  • 30 oz. frozen hash browns, thawed
  • 1/2 cup butter, melted

Instructions

  1. Preheat oven to 350º. Spray or grease a 9x13 baking pan.
  2. Make sure your hash browns are thawed, or pop them in the microwave for a quick defrost.
  3. In a large bowl, whisk eggs.
  4. Add sour cream, onion, salt, and pepper, and mix well.
  5. Stir in 1 1/2 cups cheese.
  6. Stir in hash browns and melted butter.
  7. Transfer mixture to prepared pan.
  8. Top with remaining 1 cup cheese.
  9. Bake 45-55 minutes, until a knife inserted in the center comes out clean.

Sounds yummy! I'd like to try this recipe during the holidays with crumbled bacon or diced breakfast sausage. This would be a great dish to take to a potluck brunch. Can't wait to taste it!
