Fresh raspberries, oats and honey combine for healthy raspberry oatmeal cookies!
My parents have thriving raspberry bushes, and every year they are generous enough to let me come and pick as many raspberries as I want.
I always end up with plenty of juicy raspberries to bake with, make jam with, and eat fresh on our yogurt or cereal. Fresh raspberries (especially right off the bush) are such a delicious, summery flavor.
I found this lovely recipe for healthy raspberry oatmeal cookies when last year’s raspberry harvest came in. I have tried and true raspberry recipes I love and make over and over, but I do love branching out and trying new recipes each harvest as well!
This is a great recipe if your family is trying to eat healthier, but still have a sweet tooth. Sometimes it’s hard to resist the urge, so I think it’s important to have healthier sweets around, so you don’t end up eating something unhealthy instead.
Healthy Raspberry Oatmeal Cookies
Ingredients
- 2 Tbsp melted butter
- 1 egg
- 1 tsp vanilla
- 1/2 C honey
- 1 C oats
- 3/4 C whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 6 Tbsp raspberries
Instructions
- Whisk together butter, egg and vanilla. Stir in honey. Add remaining dry ingredients (except raspberries).
- Fold in raspberries.
- Refrigerate dough for 30 minutes.
- Preheat oven to 325 degrees. Line a cookie sheet with parchment paper.
- Drop dough on cookie sheet by the spoonful. Bake 13 minutes, or until edges are slightly golden.
- Cool.

What oats do you use, is it the instant or the rolled oats?

Either can be used. I use regular rolled oats, but if you prefer a less chewy cookie instant or quick oats should be used.
