This lemonade cake is super easy as it uses a cake mix as a base! But there are so many possibilities for what you can do with it. That I just had to share it! You can make cupcakes, use it as a pound cake with strawberries or even eat it plain and it’s fantastic!
I’ve used this recipe twice since moving to Idaho. Yep, twice! It was that good! I’ve made cupcakes and a bundt cake using this recipe and both were great. Personally, I really enjoyed the bundt cake with strawberries over the top! But the cupcakes with pink and yellow frosting and lemon drops on top were so fun!
Basically all you do is replace half to all of the water called for on your white cake mix directions with lemonade concentrate. I’m giving you the recipe using a Duncan Hines White Cake mix but it’s easy to adjust accordingly and use whatever brand cake mix you would like.
Lemonade Cake
Ingredients
- a Duncan Hines white cake mix
- 4 egg whites
- 1/2 cup lemonade concentrate
- 1/2 cup water
- 1/3 cup oil
Instructions
- Mix all ingredients with a hand mixer or whisk. Bake according to directions on the cake mix box.
This is such a fun and simple twist on a regular white cake mix. It’s so easy and fun and great for spring and summer! So next time you need to whip up a cake in a hurry, try this one out!
