Your favorite coffee in popsicle form, these Mocha Pops are refreshing and energizing!
My husband and I met when I worked at a coffee shop. He was one of my customers. He finally worked up the nerve to ask me on a date, and 5 months later we got married. The rest is history, right?
I’ve always loved my coffee (and my food) hot, hot, hot. But my husband loves his coffee iced. It can be the middle of the summer, and my coffee is hot and his is iced. Middle of the winter, my coffee is hot and his is iced. They say opposites attract, and they’re right (at least on the coffee part).
However, sometimes when it gets really, really hot (it has to be over 100º), I want something cold. I make a lot of popsicles, since they seem like an easy way to refresh ourselves. I wanted to try making a popsicle that tastes like my husband’s iced mochas, so I came up with these Mocha Pops.
My experiment turned out amazing. Seriously, these were so delicious. They’re full of coffee flavor mixed with chocolate goodness. Yum.
- 1/4 cup Half & Half
- 1 cup Chocolate Milk
- 3/4 C Espresso, or strong brewed coffee
- 1 oz Vanilla syrup
- 2/3 C Whole Milk
- Combine ingredients (I did so in a blender). Pour into popsicle molds and freeze for 1 hour before inserting the sticks. Freeze until solid (overnight). If necessary, run hot water over the outside of the mold to remove mocha pop.
