Potstickers – Goal for October

The same restaurant that sells the Pizookie (Cast Iron Cookie) also sells chicken pot stickers that I love. We do not have that restaurant anywhere close. And so I miss these wonderful potstickers. One of my older sisters suggested I make potstickers a goal. Great idea!

So I set off to learn to make potstickers. First off, let me explain what pot stickers are. As Alton Brown would say every culture has their version of dumplings. Italians have ravioli, Polish have pierogi, Russians have pelmeni, Turks have manti, and Chinese have potstickers. They are dough filled with something. Traditionally potstickers are filled with meat & vegetables. For our potstickers, I will be using chicken, cabbage and green onions with a few other things.

Things you will need:
Roasted chicken
Green onions
Napa cabbage
Boiling water
Garlic
Soy sauce
Sesame oil (on the ethnic foods aisle)
Cornstarch
Potsticker wrappers (also called gyoza wrappers, usually found in the refrigerated produce area)
Olive oil
Skillet with lid
Food processor
Water

Thinly slice cabbage. Place in a medium size bowl and pour boiling water over to soften. Rough cut the chicken into chunks. Place chicken in food processor. Drain cabbage & place in food processor. Mince garlic and add to food processor. Add green onions, soy sauce and sesame oil to food processor. Sesame oil has such a wonderful toasted scent and is an important ingredient in these. But sesame oil is very strong so you don’t want to add too much. Pulse processor until chicken chunks are smaller and then turn on until well mixed and pulverized. Taste and add salt and pepper as needed. (This will need salt even for those who don’t generally salt while cook like me)

Take potsticker wrappers and lay them out on a clean and dry counter. Fill a small bowl with water. Place 1 tsp of filling in the center.

Dip your finger in the water and wet the edge of one half of the wrapper. Fold over and pleat the edges. Set aside and repeat until you’ve filled as many as you want.

In a skillet with a lid, add a Tbsp of canola with a splash of sesame oil. Sesame oil is great to add a few drops of to any oil you are using to make Asian food. A little goes a long way. Turn heat to medium. Once oil is heated add potstickers. You only want to add what will fit on the bottom of the pan. You don’t want to layer these.

Allow to get light brown and flip. You won’t have to leave them very long. Once light brown, add water and cover. Steam for 4 minutes. Remove from pan and serve with dipping sauce. These make great appetizers.

Ingredients

  • 3 cups of boiling water

  • 2 cups roasted chicken breast, diced
  • 2 green onions, diced

I love potstickers, but I am usually too intimidated to try them by myself. My students in China taught me how to make dumplings/potstickers, and I really should attempt them again. Thanks for such an inspiring recipe!
