BBQ Chicken Personal Pita Pizzas are a fun dinner your whole family will love!
I’ve admitted before that my family loves pizza, so we usually eat it once a week. But I kind of like to mix things up sometimes, as I get a bit bored with pepperoni pizza (my husband would be perfectly happy with pepperoni pizza every day!). So here’s another pizza variation I came up with: BBQ Chicken Personal Pizzas.
My husband was asking for pizza the other night, but I had leftover Crockpot BBQ Chicken that needed to be used up. I also hadn’t started any pizza dough in order to make pizza in time. So I started looking around, and my first thought was to use tortillas in place of pizza crust, but it honestly didn’t sound quite right. Then I remembered I had bought some pitas from Costco. I used the pitas for the crust, and they turned out amazingly good!
BBQ Chicken Personal Pizzas are a great way to use the leftovers from either Crockpot BBQ Chicken Sandwiches or Slow Cooker BBQ Whole Chicken. Simply shred the leftovers well, stir the BBQ sauce in well, and load up each pita with chicken. Top with shredded cheddar cheese, or whatever cheese you prefer. I love the flavor combination of cheddar cheese and BBQ sauce.

- Pitas, enough for your family
- Shredded Cheese, I used Cheddar
- Preheat oven to 400 degrees.
- On a cookie sheet, arrange pitas. Top with BBQ chicken and sprinkle with cheese.
- Bake 10-15 minutes, or until cheese is melted and chicken is heated through.
