Do you love fall? How about pumpkin spice lattes, flannel shirts, and layering sweaters? Sometimes I start craving fall flavors when it’s still hot out, so I like to make cool fall treats for that late summer/ early fall time period. These pumpkin spice latte popsicles are one of those recipes. You may also enjoy these Boozy Pumpkin Milkshakes.
You can make these popsicles with your favorite form of milk. I’ve made them with coconut milk and whole milk (I prefer the whole milk, personally), but you can use almond milk or cashew milk, or whatever you’d like. Milks that are higher in water content will result in a more icy popsicle, so I would recommend that you try to use high fat milks for the best results.
You can use store bought pumpkin pie spice, or you can easily make your own.
Popsicles can be made as simply as using paper cups and sticking a popsicle stick in each one. However, I prefer to use this popsicle mold. I have tried many popsicle molds, and this one is my favorite. I like that it has a lid that helps hold the popsicle sticks in the right position. It also makes just the right size of popsicles.
One tip for using popsicle sticks in homemade pumpkin spice latte popsicles: Soak the popsicle sticks in hot water for about 5-10 minutes before inserting them in the popsicles. This causes the wood to expand, and will allow the popsicles to attach to the wood better. There’s nothing worse than having your popsicle come off the stick mid-lick!

Ingredients
- 2 cups whole milk (or 13.5 oz can coconut milk)
- 1 cup pumpkin puree
- 1/4 cup honey
- 1 tsp. pumpkin pie spice
- 1 tsp. instant coffee
Instructions
- Blend all ingredients together in a blender.
- Pour into popsicle molds and freeze until solid.
