Strawberry Cream Cheese Bites

These Strawberry Cream Cheese Bites are easy to make, and they’re bursting with delicious strawberry flavor! Perfect to make ahead of time for a fun baby girl shower, girl’s birthday, or other pink event.

I don’t have strawberry extract, what can I substitute for it?

While it’s often possible to substitute ingredients in recipes, this isn’t one of those cases.  The strawberry extract allows you to get an intense strawberry flavor without changing the consistency of the strawberry cream cheese bites.

Do I need to add food coloring?

Definitely not.  Without food dye, these strawberry cream cheese bites will be white, which is completely acceptable.  Adding a small amount of pink gel food coloring will add a lovely pink color if so desired.

What are other ways to use up a lot of cream cheese?

Of course there are the obvious cheesecake-type recipes.  We’ve got some fun cheesecake variations, along with other sweets containing cream cheese:

Instructions

  1. In a stand mixer, or using an electric mixer, mix together cream cheese and strawberry extract until smooth.
  2. Beat in powdered sugar one cup at a time. It may be necessary to use your hands to mix in the last cup.
  3. If you're using food coloring, add it and mix it in well.
  4. Roll balls of strawberry cream cheese bites about the size of a large marble.
  5. Place on a piece of parchment paper, and flatten with the tines of a fork.
  6. Repeat until you've used up all of the cream cheese mixture.
  7. Cover with a paper towel or a clean tea towel, and allow to sit for several hours, or overnight.
  8. Serve. Store any extra strawberry cream cheese bites in an air tight container in the refrigerator. Lasts for several weeks in the fridge.

Notes

**I recommend using gel food coloring, so you can get the color without having to add too much food dye
