Strawberry Pineapple Cake

A sweet strawberry pineapple cake covered in delicious strawberry cream cheese frosting.
Ingredients
- 1 white cake mix
- 3 ounce box strawberry flavored instant gelatin
- 20 oz. can crushed pineapple
- 4 large eggs
- 1/2 cup vegetable oil
- 1/4 cup water
For the Strawberry Cream Cheese Frosting
- 1/4 cup butter, softened
- 8 oz. package cream cheese, softened
- 1/4 cup pureed strawberries
- 1/2 tsp vanilla extract
- 7 cups powdered sugar
Instructions
- Preheat oven to 350 degrees. Lightly grease and flour 2 round 9-inch cake pans.
- In a large bowl, combine cake mix and gelatin.
- Add 1 heaping cup crushed pineapple (set aside the remainder of the can), eggs, oil, and water; beat at medium speed with an electric mixer until smooth.
- Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans 10 minutes, and then cool completely on wire racks before frosting.
- Spread Strawberry Cream Cheese Frosting on top of bottom layer. Spoon remaining pineapple over the frosting. Top with 2nd layer cake, and frost top and sides of cake.
For the Strawberry Cream Cheese Frosting
- In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy.
- Beat in strawberry puree. Beat in extract.
- Gradually add powdered sugar, beating until smooth.
Notes
For pinker frosting, add 2 to 3 drops of red food coloring to frosting.
