Who doesn’t want to eat cookies for breakfast? With these Sunrise Breakfast Cookies, you can! Packed with oats, nuts, seeds, dried fruit, and more, they’re very filling!
Many years ago, I shared the original Breakfast Cookies recipes. They are still a huge hit with my family every time I make them. This year, I decided I wanted to try a new variation. Using the helpful ideas our readers had shared in the comments, I decided to add in dried apricots, as well as more nuts and sunflower seeds. I also added Turmeric.
I was so happy with how these turned out. Delicious and filling, so my kids weren’t looking for second breakfast like little hobbits.
Is it OK to eat cookies for breakfast?
It is if they’re not regular cookies. Breakfast cookies aren’t just any cookies. These Sunrise Breakfast cookies are more filling than regular cookies, and they also have more protein. We’ve added oats, almonds, pecans, sunflower seeds, flax seed, raisins, dried cranberries (Craisins), and dried apricot, so these breakfast cookies will fill you up and keep you full.
What Spices are in Sunrise Breakfast Cookies?
These cookies are seasoned with cinnamon and turmeric. Turmeric is used to reduce inflammation in the herbal community. This makes it useful for arthritis pain and other chronic inflammation issues.
Cinnamon also is used for inflammation, is used to support digestion, and has been shown to lower blood glucose levels. There are even claims that cinnamon might be beneficial in the treatment of Alzheimer’s, HIV, strep, e.coli, and more, due to its antioxidant properties. Whether or not these claims are true, we definitely know that cinnamon adds great flavor to any dessert!
If you aren’t a fan of either turmeric or cinnamon, you can feel free to skip either. Some find the flavor of turmeric to be too strong for their liking, so use your best judgement.
The same goes for the nuts and dried fruit. If there are any that you don’t prefer, you can feel free to skip or substitute them.
- 2 sticks butter, softened
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 tsp vanilla extract
- 1 tsp almond extract
- 2 eggs
- 1 1/2 cups flour
- 2 tsp turmeric
- 1 tsp cinnamon
- 1 tsp baking soda
- 3 cups old fashioned oats
- 1 cup dried cranberries
- 1 cup raisins
- 1 cup pecans, chopped
- 1 cup raw almonds, chopped
- 1/2 cup dried apricot, chopped
- 1/2 cup plaint, roasted sunflower seeds
- 1/4 cup flax seed
- Preheat oven to 350 degrees.
- Cream together butter, brown sugar and white sugar.
- Add both extracts and eggs and beat well.
- Add flour, turmeric, cinnamon and baking soda and mix.
- Stir in oats. Stir in the rest of the ingredients until well mixed.
- Use a small ice cream scoop to make cookie balls, and place on an ungreased cookie sheet.
- Bake for 11-12 minutes, until golden brown.
