It's no secret that I love frittatas.  We love eggs at our house and whipping up a quick frittata is an easy way to make a great family dinner or a wonderful brunch dish.

A sweet potato frittata was actually the first frittata, I ever made.  That was before we started blogging, so I never shared the recipe on here.  We love sweet potatoes and I really enjoy adding them into my frittatas.

Yield: 8 people

Sweet Potato Frittata

Sweet Potato Frittata
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes

Ingredients

  • 1 tablespoon olive oil
  • ½ med onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 large sweet potato, cut into bite sized pieces
  • 10 large eggs, beaten
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Saute onions & bell pepper in olive oil until tender. Add sweet potato & cook for about 3-4 minutes.
  3. Remove from heat. Add eggs and stir.
  4. Bake for 25-30 minutes, until eggs are set.
