Turkey Macaroni Vegetable Soup

Ingredients

  • 2 tsp olive oil
  • 3 cloves garlic chopped
  • 1 onion chopped
  • 2 lbs ground turkey
  • 1 15oz can chicken broth
  • 1 16oz bag frozen mixed vegetable
  • 1 16oz can Italian Style Tomatoes
  • 1 15oz can pinto beans or great northern beans
  • 1 15 oz can kidney beans
  • 1 tbsp dried Oregano
  • salt to taste
  • pepper to taste, be generous
  • 4 cups water
  • 1 1/2 cups dry macaroni

Instructions

  1. Place olive oil in bottom of a large dutch oven or pot and saute until tender and translucent.

  2. Add turkey and brown.  

  3. Add remaining ingredients except for the macaroni.  Bring to a boil, cover, and reduce heat to a low simmer.  Cook for about 30.

  4. Add pasta.  Cover and simmer for about 8 - 15 minutes or until pasta is desire tenderness.
