Very Berry Coffee Cake

For the Fruit Layer

  • 1/2 C sugar
  • 1/4 C cornstarch
  • 1 C strawberries
  • 2 C raspberries

For the Batter

  • 3 eggs
  • 1 C plain yogurt
  • 1 tsp vanilla
  • 1 C sugar
  • 3 C flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 C butter, cold


  1. Grease a 9x13 pan, and preheat oven to 350ยบ.

For the Fruit Layer

  1. Combine the sugar and cornstarch in a small sauce pan and stir well.
  2. Add the strawberries and raspberries, and stir until combined.
  3. Cook over medium heat, until thickened.
  4. Remove from heat and set aside.

For the Batter

  1. Beat eggs in a small bowl.
  2. Stir in yogurt and vanilla and beat until combined well.
  3. In a separate large bowl, stir together sugar, flour, baking soda and baking powder.
  4. Cut in butter until mixture resembles fine bread crumbs.
  5. Stir the yogurt mixture into the flour mixture, until just moistened.
  6. Spoon a little over half of the batter into pan.
  7. Pour the fruit mixture over the batter.
  8. Top with the remaining batter.
  9. Bake for 40-45 minutes, until golden brown.
