Preheat oven to 375.
Peel, core, and chop apples into 1/2" cubes.
In a medium bowl, mix apples, cinnamon sugar, and flour. Set aside.
In a small bowl mix, sugars and bread crumbs. Set aside.
Roll one of the puff pastries out to 12" x 10".
Sprinkle half the sugar mixture on half of the puff pastry. On the half that is 12" x 5". Pour half the apples on top of the sugar mixture.
Roll the puff pastry starting with the side with the apples. Pinch the ends shut.
In a small bowl, mix egg yolk and water.
Place on a parchment lined baking sheet. Brush with egg wash and cut slits in the top of the puff pastry.
Bake for 40 minutes.
Allow to cool slightly before serving.
