In a large bowl, stir together sugars and cinnamon.
In another bowl, whisk together egg white and vanilla
Spray a large Crock Pot with non-stick spray.
Stir almonds into egg white mixture. Put into prepared Crock Pot.
Sprinkle cinnamon sugar mixture over the top.
Cook for 2 1/2 hours, stirring every 30 minutes.
After 2 1/2 hours, stir in water.
Cook another 30 minutes.
Pour mixture onto a cookie sheet lined with parchment paper, and allow to cool (harden).
