No Bake Cranberry White Chocolate Granola Bars are a healthy but delicious snack!

My family loves snacks. I have friends who don't give their kids snacks. However, I find myself feeling hungry mid-afternoon, so I think I would have a hard time going without snacks, let alone making my kids go without snacks. So rather than say no to snacks, I try to have healthy snack options in our home, such as these no bake cranberry white chocolate granola bars.

I make these granola bars with Ocean Spray® Craisins® Dried Cranberries. I love buying the biggest bags possible, so when I saw that they no longer carried them at Sam's Club, I panicked! However, I was happy to find that Craisins® Dried Cranberries were still available at Fred Meyer!

The variety of Craisins® Dried Cranberries available at my Fred Meyer was such fun! Since I use them for baking and making snacks, I grabbed two of the 24 oz. value packs. They're great mixed into granola or yogurt, and I love that just ¼ cup of Craisins® Dried Cranberries is equal to ½ a cup of fruit! I don't know about you, but I have a hard time getting all my fruits and veggies in, so this is an easy way to up my intake.

When it comes to snacks, I want them to be healthy, but also delicious. I've had some snacks that were so healthy that they tasted like cardboard. But I believe that healthy can taste amazing. And these no bake cranberry white chocolate granola bars are proof of that. Despite the fact that they're healthy, they still taste so good!
I knew I wanted to make granola bars that we could easily grab to take with us on the go, but it was also too hot to turn on the oven and bake them, so I created a no bake version. These granola bars take about 5 minutes to whip up, and then they need to be refrigerated for an hour before cutting and eating them if you want them to retain their shape.
I knew I wanted the tangy zing of Craisins® Dried Cranberries in these granola bars, so I tried to think what would go well with them. My kids keep asking if we can make something with white chocolate chips, and I figured that would be a good combination, so we added those in. And I wanted a bit of a crunch, so I decided to add in raw pumpkin seeds. Almonds or another nut or seed can easily be swapped out for the raw pumpkin seeds if you prefer.

No Bake Cranberry White Chocolate Granola Bars
Ingredients
- 3 ½ C oats, divided
- ½ teaspoon salt
- 1 C peanut butter
- ½ C butter or coconut oil, melted
- ½ C honey
- ¾ C Craisins® Dried Cranberries
- ½ C raw pumpkin seeds
- ½ C white chocolate chips
Instructions
- Line a 9x13 pan with parchment paper.
- In a food processor, blend ½ C. oats and salt for about one minute, until processed into small pieces. Add peanut butter, butter or coconut oil, and honey, and blend until smooth.
- Transfer this mixture to a large bowl.
- Stir in remaining 3 C. oats. Then stir in remaining ingredients.
- Press mixture into parchment paper lined pan, pressing down to make even.
- Refrigerate for one hour, or put in the freezer for 30 minutes.
- Cut into 18 pieces.
- Wrap each bar in parchment paper and keep in an air tight container in the fridge***.
Notes
***We have taken these from the fridge for our lunches on the go, and they've been fine. They still retained their shape and taste about 4 hours after removing them from the fridge.

I already know who I would make these for! I have a lot of friends that love white chocolate and cranberries, this looks simple enough that I could actually make it. I'm kind of excited to try it.
Every recipe that has no-bake is my kind of recipe! It saves me time and still gives me the dish that I love. I think this is awesome and it's really worth trying. That brand of craisins is really good, I always keep a bag in my kitchen.
