My kids were so thrilled when I made them Virgin Watermelon Margaritas, that they've been asking me to make them another "special drink."  So today I decided to go for it and give it a try, and these Virgin Strawberry Rhubarb Margaritas were conceived.

I've got a big rhubarb plant that is about as hardy as a plant can get.  We moved in the fall before last, and most of the yard was either overgrown weedy, or dead and scorched, due to the fact that it had been vacant for some time.

After Dan had mowed the lawn, I realized that one of the plants growing in the really overgrown area was a rhubarb.  And he had just scalped it down to the ground.  Surprisingly, it grew right back, so now I know that it's a great low maintenance plant, which is exactly what I love!

These virgin strawberry rhubarb margaritas are blended, which is the way I like my margaritas.  None of that on-the-ice thing for me!  Plus, when you blend a virgin margarita, it just looks so pretty, right?

To give you an idea of what real life looks like for a food blogger, my kids were so excited about these.  They helped add the ingredients to the blender and blend them.  They got to try a little on a spoon as we tweaked the recipe.  Then they had to wait while I took pictures!

They were good sports, though, and even did well when I ordered one back out to the rhubarb plant to cut some stalks for my pictures, and sent the other out front to the strawberry patch for a blossom and leaves!

Yield: 4 Mocktails

Virgin Strawberry Rhubarb Margaritas

Virgin Strawberry Rhubarb Margaritas

These Virgin Strawberry Rhubarb Margaritas are a sweet, tart frozen mocktail.

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 2 cups Rhubarb, chopped
  • 1 cup Strawberries, chopped
  • 12 oz. can Lemon-Lime Soda
  • ¼ cup juice or water, as needed

Instructions

  1. Chop rhubarb and strawberries into small pieces.
  2. Freeze for 3 hours (or longer).
  3. In a blender, combine rhubarb, strawberries, and soda.  If needed, add juice of your choice (I used a little grape juice) or water to make it blend.
  4. Mixture should be thick.
  5. Pour into glasses and enjoy!
