This Skillet Chicken with spinach, artichokes and sund-dried tomatoes is so delicious and creamy! And best of all, it's ready in 30 minutes, and it cooks all in one skillet so there is only one dish to wash! These kind of meals are the best weeknight dinners at my house-- quick and easy!

Skillet Chicken with Spinach, Artichokes and Sun-dried Tomatoes
Ingredients
- 2 tablespoon oil
- 2 lbs chicken breasts,, chopped
- 4 cloves garlic,, minced
- 2 cups chicken broth,, or 14 oz can
- 8 ounces cream cheese,, softened
- 2 cups spinach,, chopped
- 14 oz can artichoke hearts,, quartered
- ½ cup sun-dried tomatoes,, chopped
- ½ cup grated parmesan
- 8 oz angel hair pasta
Instructions
- Heat oil in a large skillet. Add garlic and chicken.
- Cook until chicken is cooked through.
- Add broth and cream cheese, and cook and stir until cream cheese is melted.
- Add remaining ingredients and cook over medium heat for 5-7 minutes, until pasta is cooked.
