Candy Cane Chocolate-Dipped Wafers make a great Christmas gift!
If you're looking for a last-minute gift for neighbors, friends, or co-workers, these candy cane chocolate-dipped wafers are perfect!  They meet all the requirements of last-minute: they're quick and easy to make, they're cute, and they taste delicious!

One of the best parts about these candy cane chocolate-dipped wafers is that they don't require very many ingredients, and they can be made in less than 30 minutes.

For the wafer cookies, I usually use Gamesa Chocolate Sugar Wafers, but when I went to the store I was unable to find them, so I picked up these Osem Wafers instead.  Both varieties are found in the ethnic food aisle.  The Gamesa wafers are made in Mexico, and the Osem wafers are made in Israel.  Both varieties cost about $2 at my local grocery store.

For the dipping, you can use Wilton Chocolate Candy Melts.  I found the same thing in bulk at my local Winco, for cheaper.  You will need approximately ½ a bag (or 5-6 ounces) per 6-8 ounce package of wafer cookies.

Finally, crush up some candy canes.  You need about 4.  You can use a food processor, but I feel that this makes it too fine-- I like for there to be a few slightly larger chunks.  So I just put them in a bag and used my meat tenderizer mallet to bust them up.

Ingredients:

  • 6-8 ounce package of sugar wafer cookies
  • 5-6 ounces chocolate candy coating
  • 4 Candy Canes, crushed

Directions:

  1. Line a cookie pan with waxed paper.
  2. Crush candy canes.
  3. Put chocolate in a microwavable bowl.  On defrost setting, at about 40% power, microwave for 1 minute.  Stir well.  If needed, microwave (still on defrost at 40% power) for 30 second intervals until chocolate stirs smooth.
  4. Dip wafer cookie into melted chocolate.
  5. Dip into crushed peppermint.
  6. Lay to dry on waxed paper.
