So my oldest son turned nine this week. 9!!!  Holy Cow, when did he get so old!?!  When did I get so old!?!  We didn’t have a full blow party this year, since we were busy with all our spring break fun, a trip to the Fort Worth zoo, visiting with Great-Grandparents and more.  Plus he and his dad went golfing all day on his birthday.  So I told him I would make his favorite food for dinner and whatever kind of cake he wanted.  He choose French toast for dinner and this Oreo Ice Cream Cake.

This cake may look familiar as I wrote about it in “A Very Buggy Birthday,” a recount of my son’s 7th birthday party.  We left the worms off the cake this time though!  However, I didn’t have the actual recipe in the post, just a link to it on My Recipe Magic, so I thought it was time to share it here on the blog.  

This is the cake my mom would make me every year for my birthdays growing up as I wasn’t a fan of traditional cake.  And it’s still one of my favorites!!  It’s easy to put together and it’s super yummy and it has Oreos!! And since there is no actual cake involved it’s perfect for those who aren’t so fond of cake.

Oreo Ice Cream Cake

Prep Time 20 minutes

Total Time 20 minutes

Ingredients

• 1 18 oz pkg Oreo cookies, smashed
• 1/2 gallon vanilla ice cream, softened
• 8 ounces cool whip

Instructions

1. Press half (or a little less) of smashed Oreos into bottom of a 9 by 13 in pan.
2. Mix softened ice cream and cool whip together.
3. Spread half of ice cream mixture over the Oreo crust and let sit on counter about 5 minutes, until the ice cream begins to seep into the crust.
4. Meanwhile, mix remaining cookies with ice cream mixture and place in fridge.
5. Place pan in freezer for about 10 minutes. This will give the cake a layered look.
6. Spread cookies and ice cream mixture on top of cake and place back in freezer for at least an hour or until ready to serve.

Notes

For easier cutting: Let sit outside freezer for a few minutes before cutting.
