Chocolate Chip Waffles

Delicious chocolate chip waffles make a great breakfast, or even breakfast for dinner!

One way I have been trying to stretch our food budget is by having breakfast for dinner once a week.  Obviously, this won't save you money if you have a huge side of bacon or sausage or something, but for us we usually have pancakes or waffles and eggs, or scrambled eggs with a bunch of fun stuff in them, or quiche, or even crepes.  One favorite of my kids is homemade Chocolate Chip Waffles. This is just a simple waffle recipe adapted from my Betty Crocker cookbook, but kicked up a notch with the sweet goodness of a few chocolate chips.

My dad always put chocolate chips in our waffles or pancakes when we were growing up- not a lot, but just a few in each one- and they were my favorite!  So when I make Chocolate Chip Waffles, it makes me think of my dad.  He's such a great dad!  And he makes the best breakfast foods.

I usually put peanut butter on the waffles for my kids (a little extra protein), and serve with either eggs or yogurt, but they're also delicious with apple sauce instead of syrup.  Fix them up however you like them!

Chocolate Chip Waffles

Chocolate Chip Waffles
Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 2 large eggs
  • 2 cups flour, (you can use all purpose or wheat, whichever you like better)
  • 1 ¾ cups milk
  • 1 stick of butter,, melted
  • 1 tablespoon brown sugar
  • 4 teaspoon baking powder
  • ¼ teaspoon salt
  • ⅓-1/2 cup semi-sweet chocolate chips
  • Toppings of your choice

Instructions

  1. Heat up your waffle iron.
  2. In a large bowl, beat your eggs with a whisk until fluffy.
  3. Mix in remaining ingredients, except chocolate chips and toppings.
  4. Pour ½ to ⅔ cup batter onto the hot waffle iron (it will expand as it cooks, so don't overdo it!)
  5. Sprinkle chocolate chips across the batter in the waffle iron, and then close the iron and let the waffle cook.
  6. Cook for about 5 minutes, or until the waffle is golden.
  7. Spread with peanut butter (or not) and top with syrup or whatever other toppings you desire.

Notes

You can mix the chocolate chips into the batter, but it's difficult to get an even amount into each waffle, so I find that sprinkling the chocolate chips works better.
The original recipe says it makes six 7-inch round waffles using ⅔ cups batter, but I am only able to use barely ½ cup of batter, so I get 8-9 waffles instead.

    1. I'm glad you like peanut butter, too. My husband won't even try the peanut butter, but he does love the chocolate chip waffles!

  8. We do the same thing to stretch the budget. Luckily my kids love breakfast foods so waffles and such are a great treat. Yum and adding chocolate to the waffles is delicious for sure 🙂
