This Raspberry Cake is dreamy.  Not only is it so flavorful it will melt in your mouth, it's also gorgeous, especially when paired with Earl Grey Buttercream Frosting.  If frosting infused with tea isn't your thing, you might prefer our Raspberry Cake with Chocolate Frosting, which is every bit as delicious!

Can I add fruit to a cake mix?

That's precisely what we've done with both this raspberry cake and our Simply Delicious Strawberry cake.  Adding fruit makes for a moister cake, and really packs in the flavor!

Both of these cakes use a white cake mix, but a yellow cake mix can be substituted in a pinch.

What's the purpose of adding Jello to a cake recipe?

Adding in a flavored gelatin, such as Jello, to a cake recipe serves several purposes.  First off, it will add flavor-- however, it does also add sugar, so you will get a bit sweeter cake.  Second, the cake will be slightly more dense because of the addition of gelatin.

Raspberry Cake with Earl Grey Frosting

Raspberry Cake with Earl Grey Frosting is a cake packed with fresh raspberries and covered in a delicious Earl grey tea infused buttercream frosting.

Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 12 oz fresh or frozen raspberries, thawed
  • ¼ cup water
  • 1 white cake mix
  • 3 oz box of raspberry gelatin
  • 4 eggs
  • ½ cup oil

Instructions

  1. Preheat oven to 350 degrees. Grease 2 round 9" cake pans and line with greased parchment paper (or flour them). Set aside.
  2. Puree raspberries with water in a blender.
  3. In a large bowl or the bowl of a stand mixer, combine cake mix and gelatin. Stir in raspberry/water mixture, eggs, and oil. Beat with an electric mixer on medium speed until smooth.
  4. Pour into pans and bake in the center of oven for 20-23 minutes, or until edges are set and a toothpick inserted in the center comes out clean.
  5. Cool in pans for 15 minutes, then cool completely on wire rack before frosting.

Notes

If you are using frozen raspberries, I recommend allowing the raspberries to come to room temperature, in order to end up with best results.

Earl Grey Buttercream Frosting

Earl Grey Buttercream Frosting

A flavorful buttercream frosting with the addition of Earl Grey. This frosting will be your new favorite!

Total Time 20 minutes

Ingredients

  • ¼ cup half & half
  • 1-2 Earl grey tea bags**
  • 1 cup butter, room temperature
  • 4 cups powdered sugar
  • 2 teaspoon vanilla extract

Instructions

  1. Heat half & half in a microwave safe mug for 30 seconds - 1 minutes. It will boil, so use a deep mug and watch it closely.
  2. Place tea bag in half & half to steep, and set aside.
  3. Cream butter in a stand mixer or a large bowl using a hand mixer.
  4. Slowly add powdered sugar mixture to butter. Scrape sides as needed.
  5. Remove tea bag from half & half, and squeeze as much of the liquid out of the tea bag into the half & half.
  6. Add half & half to butter & powdered sugar mixture. Add vanilla. Stir to combine.
  7. If buttercream is too thin, add more powdered sugar until desired consistency is reached.

Notes

When steeping the tea bag in the half & half, you may notice some curdling. This is normal, and will not be noticeable in the finished frosting.

**For a mild-flavored cake, 1 tea bag will do. For a more intensely flavored cake (such as the Raspberry Cake), you'll want to use 2 tea bags.
