After making the Granola Bites I blogged about a while back, my kids and my husband kept requesting them. They get eaten up really fast! For some reason, I kept thinking how tasty it would be if they were chocolatey and made with Nutella, instead of peanut butter. So, since I’ve thought it for a while, I finally decided to give it a try. I decided to make them with chopped almonds instead of chocolate chips, and suddenly the Almond Joy Granola Bites recipe was born.
These Almond Joy Granola Bites turned out phenomenal. I let my husband try one, and he ended up eating several. All of the Almond Joy Granola Bites were gone in 2 days.
These are still pretty healthy, but they taste like a treat.
Almond Joy Granola Bites with Nutella
Ingredients
- 1 cup quick oats,, or blend 1 cup old-fashioned oats in a food processor
- 1/4 tsp salt
- 1 cup coconut
- 1/4 cup chopped almonds
- 3/4 cup Nutella
Instructions
- For these, I found that they needed to be mixed by hand. So, in a bowl combine the oats, salt, coconut, and almonds. Then mix in the Nutella.
- Roll by Tablespoonfuls (my smallest ice cream scoop is a Tablespoon). Makes approximately 2 dozen granola bites. Store in an air-tight container in the refrigerator for up to a week.

These are one of my husband's favorites! Which cracks me up, since he "doesn't like Nutella." He just thinks they're chocolate!
