Almond Joy Granola Balls with Nutella

After making the Granola Bites I blogged about a while back, my kids and my husband kept requesting them. They get eaten up really fast!  For some reason, I kept thinking how tasty it would be if they were chocolatey and made with Nutella, instead of peanut butter. So, since I've thought it for a while, I finally decided to give it a try. I decided to make them with chopped almonds instead of chocolate chips, and suddenly the Almond Joy Granola Bites recipe was born.
These Almond Joy Granola Bites turned out phenomenal. I let my husband try one, and he ended up eating several. All of the Almond Joy Granola Bites were gone in 2 days.
These are still pretty healthy, but they taste like a treat.

📖 Recipe

Yield: 12 bites

Almond Joy Granola Bites with Nutella

Almond Joy Granola Bites with Nutella
Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 1 cup quick oats,, or blend 1 cup old-fashioned oats in a food processor
  • ¼ teaspoon salt
  • 1 cup coconut
  • ¼ cup chopped almonds
  • ¾ cup Nutella

Instructions

  1. For these, I found that they needed to be mixed by hand. So, in a bowl combine the oats, salt, coconut, and almonds. Then mix in the Nutella.
  2. Roll by Tablespoonfuls (my smallest ice cream scoop is a Tablespoon). Makes approximately 2 dozen granola bites. Store in an air-tight container in the refrigerator for up to a week.

    1. These are one of my husband's favorites! Which cracks me up, since he "doesn't like Nutella." He just thinks they're chocolate!

    And Molly, you're right about Nutella having 100 calories per Tbsp, but you might be surprised to know that Jif peanut butter has 95 calories per Tbsp and actually has more fat than Nutella. The area where Nutella is worse is on carbs, due to the higher sugar content, which is why I eliminated the honey when I made this variation.

  9. Sounds yummy, but I'm not sure anything with Nutella can be considered TOO healthy, since it has like 100 calories per tablespoon! Kills me to know that! But I'd still make them in a heartbeat! 🙂
