Many years ago, before having kids, I took a dutch oven class. I was in college, and I needed an elective, and I thought dutch oven cooking would be fun.

In the class, we were put into groups of 3-4 students.  Each week we would have to come up with a recipe to make, and then we would make that recipe in a dutch oven, and when all the recipes were finished we would put the dutch ovens in a line and dish up.

It was a really fun, laid back class.  One of the recipes my group came up with was for Dr. Pepper Baked Beans.  Over the years, and especially when the kids were young, it seemed like too much work to haul out my dutch oven.  I worried about having hot briquettes down where little fingers or toes could get them.  And so I modified the recipe to make it in a Crock Pot instead.

Dr. Pepper Baked Beans is great for a barbecue, and I love that it’s made in the slow cooker so you don’t have to heat the house up for a side dish.  I especially love to have this dish with a fresh grilled steak or hamburger, but you can really put it with anything!

If you want to make it entirely in the Crock Pot, just throw the onions in with the rest of the ingredients, and cook the bacon in the microwave.  I personally love the addition of carmelized onions, but it won’t ruin the dish if you would rather skip that step!

Crock Pot Dr. Pepper Baked Beans with Carmelized Onions

Crock Pot Dr. Pepper Baked Beans with Carmelized Onions
Prep Time 20 minutes
Cook Time 2 hours
Total Time 2 hours 20 minutes

Ingredients

  • 1/2 lb. bacon
  • 2 Tbsp. butter
  • 1 yellow onion,, sliced
  • 1 28 oz. can Pork and Beans
  • 1 28 oz. can baked beans,, any flavor
  • 2 Tbsp. tomato paste
  • 1 cup Dr. Pepper

Instructions

  1. In a skillet, cook bacon to desired crispiness. Remove bacon, and pour out grease.
  2. In the skillet, melt butter.  Add onions and cook until carmelized.
  3. Chop bacon, and reserve 1/2 cup to sprinkle on top.
  4. Combine all ingredients (except the reserved bacon) in a Crock Pot.
  5. Cook on low 2-4 hours.
  6. Sprinkle with reserved bacon and serve.
