Fruit & Zucchini Smoothie

 
Vegetables in a Yummy way

Some time ago (probably over a year ago), I was talking to Jamie about the trouble I have with getting Ry to eat vegetables.  She suggested I throw zucchini in with my fruit smoothies, since Ry loves fruit and smoothies.   (Jamie also uses gardening to get her kids to eat their veggies, check that out here).
We had an over abundance of zucchini from our garden last year, so I started throwing some in every time I made a smoothie. Ry never noticed. My daughter Kae did and if I add too much, she doesn't enjoy it as much.  This is why I mention that the amount of zucchini is up to taste.

 

📖 Recipe

Yield: 2 smoothies

Fruit & Zucchini Smoothie

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1 c . orange juice
  • 1 pieces ripe banana, peeled and broken into several
  • 1 c . strawberries
  • ½ - 1 c . zucchini, cut into pieces (depending on your taste)
  • 1 c . ice

Instructions

  1. Place ingredients in blender and blend on high speed until liquefied.

Notes

Makes 2 Smoothies or 1 adult size & several kid size.

Love that my kids are eating veggies and enjoying them!  And honestly we can all use more veggies in our diet, right?
