Healthier Cheesy Potatoes & Sausage {Crockpot}

I was talking with a fellow blogger the other day about her Smoked Sausage & Potatoes Au Gratin, noting that they looked great but wouldn't fit into my plan to eat healthier. She agreed and joked that I could substitute Chicken Sausage and pretend it was healthier.
I thought about it for several days wondering if there was a way to make cheesy potatoes healthier until I remembered I already had a healthier cheesy potato recipe!! In fact, I meant to share this recipe back in March or April and never got around to it. I quickly threw it in the crockpot for dinner that night. And now many months later am finally sharing it with you! {I realized later that I actually have two as my Potato Bites aren't that un-healthy either.}
I hesitated to call it healthy because some people swear white potatoes aren't good for you, but I'm an Idaho girl. You aren't going to stop me from eating white potatoes. So I called this Healthier Cheesy Potatoes & Sausage because it's definitely better for you than normal cheesy potatoes.

Healthier Cheesy Potatoes with Sausage
Great as dinner on it's own or as a side. We like it with eggs as "breakfast for dinner."
Ingredients
- 14 ounces smoked turkey sausage
- 5-6 medium potatoes
- 1 tablespoon olive oil
- 2 teaspoons seasoning salt
- black pepper, to taste
- 4 green onion or Β½ onion diced, thinly sliced
- Β½ cup 2% shredded cheddar cheese
Instructions
- Spray crock pot with cooking spray.
- Peel potatoes and cut into bite size pieces. Drizzle with olive oil and season with season salt and pepper and mix to coat evenly. Put half of them in the crock pot.
- Cut sausage into bite size pieces and place half on top of potatoes. Place half green onions in crock pot. Repeat layers.
- Cook on High 3 hours or until potatoes are tender. Top with cheese and let melt before serving.
Notes
If you are around while this is cooking, you may want to stir about every hour to keep the potatoes from sticking to the sides.

We ate this with scrambled eggs as "breakfast for dinner" but it would also be great on it's own or for brunch.
