Can I add fruit to a cake mix?
That's precisely what we've done with both this raspberry cake and our Simply Delicious Strawberry cake. Adding fruit makes for a moister cake, and really packs in the flavor!
Both of these cakes use a white cake mix, but a yellow cake mix can be substituted in a pinch.
What's the purpose of adding Jello to a cake recipe?
Adding in a flavored gelatin, such as Jello, to a cake recipe serves several purposes. First off, it will add flavor-- however, it does also add sugar, so you will get a bit sweeter cake. Second, the cake will be slightly more dense because of the addition of gelatin.

Raspberry Cake with Earl Grey Frosting
Raspberry Cake with Earl Grey Frosting is a cake packed with fresh raspberries and covered in a delicious Earl grey tea infused buttercream frosting.
Ingredients
- 12 oz fresh or frozen raspberries, thawed
- ¼ cup water
- 1 white cake mix
- 3 oz box of raspberry gelatin
- 4 eggs
- ½ cup oil
Instructions
- Preheat oven to 350 degrees. Grease 2 round 9" cake pans and line with greased parchment paper (or flour them). Set aside.
- Puree raspberries with water in a blender.
- In a large bowl or the bowl of a stand mixer, combine cake mix and gelatin. Stir in raspberry/water mixture, eggs, and oil. Beat with an electric mixer on medium speed until smooth.
- Pour into pans and bake in the center of oven for 20-23 minutes, or until edges are set and a toothpick inserted in the center comes out clean.
- Cool in pans for 15 minutes, then cool completely on wire rack before frosting.
Notes
If you are using frozen raspberries, I recommend allowing the raspberries to come to room temperature, in order to end up with best results.

Earl Grey Buttercream Frosting
A flavorful buttercream frosting with the addition of Earl Grey. This frosting will be your new favorite!
Ingredients
- ¼ cup half & half
- 1-2 Earl grey tea bags**
- 1 cup butter, room temperature
- 4 cups powdered sugar
- 2 teaspoon vanilla extract
Instructions
- Heat half & half in a microwave safe mug for 30 seconds - 1 minutes. It will boil, so use a deep mug and watch it closely.
- Place tea bag in half & half to steep, and set aside.
- Cream butter in a stand mixer or a large bowl using a hand mixer.
- Slowly add powdered sugar mixture to butter. Scrape sides as needed.
- Remove tea bag from half & half, and squeeze as much of the liquid out of the tea bag into the half & half.
- Add half & half to butter & powdered sugar mixture. Add vanilla. Stir to combine.
- If buttercream is too thin, add more powdered sugar until desired consistency is reached.
Notes
When steeping the tea bag in the half & half, you may notice some curdling. This is normal, and will not be noticeable in the finished frosting.
**For a mild-flavored cake, 1 tea bag will do. For a more intensely flavored cake (such as the Raspberry Cake), you'll want to use 2 tea bags.

This is my go to recipe now. I've learned to modify it with other fruits and other frosting infusions. Currently I have a blackberry cake in the oven and it's going to be paired with black tea frosting. But I've also done this with cherries and dark chocolate cake mix to make a black forest cake! If you're like me and use this as a base, watery fruits like cherries and blueberries need less water in the blender, tho I haven't figured the perfect ratio out. Alternatively you could add more flour. Up to you!
In any case this is the recipe I bust out when I want to impress people. And for all my tweaking nothing beats the original raspberry and earl grey combo.
I greatly appreciate the person who came up with this recipe. It's delicious and let me experiment with baking and make it fun for me again! I used to do it. But it was such a a chore after a while but now I feel like I've got limitless options! Delicious!

Would it be possible to make this without the raspberry gelatin? It all sounds amazing, I am just wondering if it would be ok without as I don’t would prefer not to have additional sweetness or density.

Hi, im from Czechia and we don't have white cake mix and half & half, what i can use? I want to try it so much, but I don't know what to do without these things.
@Kristýna, unfortunately, I haven't tried making this without a cake mix, or without the half and half. You could attempt to use a regular white cake recipe, but sub out the wet ingredients for the ones in this recipe, but I'm not positive if it will work. And half and half is just half cream and half whole milk, so you could combine those to substitute for that.
Sorry I don't have a definite answer for you. If you try it with substitutes, we'd love to hear how it turns out!
We loved the cake! The only downfall was all of the seeds. Any ideas on how to eliminate the seeds?
For those with a BlendTec or Vitamix blender, the seeds should be completely gone when pureeing. However, if, like me, you have an older/ not as amazing blender, you can always strain the seeds out. To do this, put a couple of sheets of cheesecloth in a colander set over a bowl. After pureeing, pour the mixture into the cheesecloth, and allow it to strain out the seeds. You may need to squeeze the cheesecloth to get out all of the liquid. I hope that helps!

Hi! I'm anal. Am I supposed to add the 1 cup water from the cake mix recipe or just the 1/4 cup water used in the raspberry emulsion? Thank you.
Instead of adding the ingredients on the box mix, you'll add the ones listed in this recipe card. So if your boxed cake mix says 1 cup, you'll ignore that, and add the 1/4 cup with the raspberries instead. The moisture in the raspberries will make up for the rest of that water. You're right, the way I worded the directions is confusing, so I'll fix it. Thanks for bringing that to my attention!
