One of the greatest time savers I’ve found as the mama of small kids is freezer meals. These 4 easy chicken freezer meals save so much time, and also a lot of money!
When I was little, my friend’s mom and grandma would get together and do “Once a Month Cooking.” Once I had my own household, I thought this seemed like a great idea, so I looked into it more, but the recipes provided didn’t appeal to me, nor did the idea of spending the evening before getting meat cooking, and then cooking for the entire following day (seriously, these ladies were amazing- they would be on their feet for probably 12 hours, cooking!). It would be nice not to have to cook every night, but I wasn’t ready to commit that kind of effort just to get out of cooking daily, so I gave up on the idea.
Fast forward about 5 years, and I joined a “cooking club” with my sister-in-law, where approximately 8-10 of us exchanged meals. Each of us made one recipe, but made 10 of that recipe, and then when we exchanged those meals we went home with 10 different meals that were already mostly made (like throw them in the crockpot, or oven, and you’re done!).
This gave me the idea of just making my own freezer meals, with meals that we enjoy!
To get even more “bang for your buck” double the recipes. If you’re already chopping 2 carrots, why not 4? Or if you’re slicing a green pepper, why not do 2, and have 2 meals instead of 1?

Rosilind, thanks so much for stopping by! A crockpot is a wonderful kitchen tool, but if you don’t have one, you can definitely still make these. I would probably thaw them out, and bake the fajitas, and either bake or cook the posole and BBQ chicken in a pot on the stove. We’d love to hear how the recipes work out for you!
