Chicken Green Bean Stuffing Casserole is a creamy, cheesy comfort food the whole family will love!

The weather keeps fluctuating between hot and cold here. It was just in the high 60s and low 70s, but today was rainy and cold.
So I was feeling like some good comfort food to deal with the weather. This Chicken Green Bean Stuffing Casserole is a favorite at my house.
My kids always love to eat this Chicken Green Bean Stuffing Casserole. They inevitably clear their plates and ask for more, which makes this mama happy!
Should Chicken Green Bean Stuffing Casserole be made with raw or cooked chicken?
This recipe is made with raw chicken. It will be fully cooked after baking. However, if it makes you uncomfortable to use raw chicken, you are welcome to use cooked chicken.
Tips for making Chicken Green Bean Stuffing Casserole:
This casserole turns out better with Stove Top Stuffing than with Mrs. Cubbison's. I haven't tried making it with any other stuffing mixes. If you would like to make your own stuffing, this knock off Stove Top Stuffing is a great recipe.
Also, it's important to note that due to the fact that this is made with sour cream instead of a can of creamed soup, the texture of the sauce will be a bit grainier. If you'd rather make it with a creamed soup, substitute a can for the sour cream. Or make your own (quick & easy) creamed soup as a substitution.
We like it just fine the way it is, but I understand some people are very used to the texture creamed soups contribute to a casserole.
I make this casserole in my favorite 9x13 pan, and if we're taking it to a potluck or family dinner, I love using a casserole carrier to keep it toasty hot!

Chicken Green Bean Stuffing Casserole
Chicken Green Bean Stuffing Casserole is a creamy, cheesy comfort food the whole family will love!
Ingredients
- 1 package of stuffing
- 1 cup sour cream
- ½ cup milk
- 2 raw chicken breasts, chopped into bite-size pieces
- 2 cans of green beans, drained
- 2 cups cheddar cheese, shredded
Instructions
- Preheat oven to 400 degrees.
- Prepare stuffing according to directions on the box. Set aside.
- In a 9x13 pan, stir together sour cream and milk.
- Add the chicken, green beans, and cheddar cheese, and stir until mixed thoroughly.
- Top with stuffing.
- Bake for 30 minutes, until stuffing is golden and chicken is cooked through.

This is a great start off recipe but it definently needs some seasonings. Also I added a can of corn into the mix as well and it was great. Do not cook chicken before hand, that’s how it gets over cooked and dey

I made this by mixing mushroom soup mix instead of sour cream. I also added fried onions on top at the end

Can I make this with frozen green beans instead? Would you cook it longer ?
I haven't ever tried making it with frozen green beans, but it seems like it would work fine. Either thaw the green beans first, or you would probably need to add 5-10 minutes of cook time if you put them in frozen.
Do you cook the chicken breasts before putting them in the casserole or do you cook them while baking the casserole?
Before.....I have either used rotisserie or boiled chicken breasts and cut them up.
The recipe is actually for use with raw chicken, and it cooks fully in the casserole 🙂 Enjoy!
Dawn, put the chicken in uncooked, and it will cook with the casserole. That's my favorite thing about this recipe is that it's just so simple!
Could this be made in the crockpot?

I haven't ever tried making it in the crockpot, but now I'm thinking this might be a good challenge! I think that the stuffing wouldn't get that delicious crispiness that comes from baking, but other than that, it seems like it would work.
