Layered Salad

Layered Salad has layers of lettuce, peas, celery, hard boiled eggs, cheese, bacon, and more! Easy to make, and delicious to eat!

 

My mom has been making this salad for as long as I can remember, and it’s always been a hit with crowds!  It’s great for a potluck, barbecue, or any get together!

I love that this is a salad that I can throw together pretty quickly, it goes a long ways, and I always get asked for the recipe.

When my husband and I started dating, I was surprised that he didn’t hardly eat vegetables at all.  His idea of salad was some iceberg lettuce.  My mom had always pushed vegetables when I was growing up, so we ate a lot of them.

He’s come a long way on eating his veggies, but even in those early years of marriage– when he didn’t like vegetables– he loved this salad.

I just asked him what he would say about this layered salad, and he answered, “It’s addicting, because it’s so crunchy and fresh and flavorful.”

So there you have it!  This layered salad is delicious.  You’re going to love it, even if you’re not a big fan of vegetables.  I’m sure the fact that it has bacon, hard boiled eggs and cheese helps.  Really, you can’t go wrong with bacon, right?

What kind of pan should I make Layered Salad in?

My mom always made her layered salad in a 9×13 pan.  However, you can use any pan or bowl you have on hand, so long as it holds about 3 quarts.  I’ve found that a trifle bowl works great, too, since most normal-sized trifle bowls are 3 qts. and then you can see the pretty layers.

Ingredients

  • 10 oz frozen peas
  • 1 1/2 C Mayonnaise
  • 2 Tbsp Sugar
  • 1 head Romaine lettuce, chopped
  • 3 stocks celery, chopped
  • 4 hard boiled eggs, chopped
  • 3 green onions, chopped
  • 1/2 lb. cooked chopped bacon
  • 3/4 C grated Cheddar Cheese

Instructions

  1. Place peas in a collander and run water over them to thaw.
  2. In a small bowl, combine mayonnaise and sugar.
  3. In a 3 quart dish (9x13 pan, or other 3 quart dish), layer lettuce, celery, eggs, green onions, bacon, and peas.
  4. Spread mayonnaise mixture over with a spoon.
  5. Top with cheese.
