Red, White, & Blue Star Cookies - These fun sandwich cookies are perfect for the 4th of July or any patriotic holiday! Easy to make, yummy to eat!

Not long ago, Jamie shared her strawberry shortcake cookies. She was at my house when she made them and I thought they were so yummy and cute! And then I thought we should make some star ones for the 4th of July and use not only strawberries but blueberries as well.  

I LOVE how these turned out!  Not only are they super tasty, just like the original strawberry shortcake cookies are but they are so darn cute!  Ok, maybe it’s just my love for all things Red, White, and Blue this summer but still, I think they are adorable.  And unlike most of the other 4th of July goodies I made this year, these are more for the grown-ups than the kids.  Not that my kids didn’t love them, they did!

These are super easy to make.  Just whip up a batch of shortbread cookies or sugar cookies would probably work just as well.  {Check out Jamie’s recipe for shortbread cookies if you need a recipe.}  Cut them into stars and then after they cool, assemble them.  And in just a few minutes you have adorable cookies perfect for the 4th of July whether you are barbecuing or attending fireworks.  

 

Yield: 12 cookies

Red, White, & Blue Star Sandwich Cookies

Red, White, & Blue Star Sandwich Cookies
Prep Time 20 minutes
Total Time 20 minutes

Ingredients

  • 1 batch shortcake cookies, cut into stars and baked according to regular directions.
  • 1-2 cups sliced strawberries
  • 1 cup blueberries, thawed if frozen
  • Cool Whip

Instructions

  1. Let cookies cool completely.
  2. Then place sliced strawberries onto one cookie and then top with about 1 Tablespoon cool whip.
  3. Place another cookie on top of that and cover with blueberries and then more cool whip.
  4. Top with a third cookie and garnish with a strawberry slice and a couple blueberries, if desired.
