My sister-in-law makes this recipe for pistachio salad all the time.  It always gets gobbled up.  A while back, I needed a recipe for a family gathering, so I asked her if I could get her recipe for pistachio salad.  Once she told me how easy it is to make, I was surprised!  Why hadn’t I been making it for years?

In fact, once I started making it, I started making it a lot.  Pistachio salad is just so yummy!  And with only 3 ingredients, it’s amazingly easy.  You may even remember that I posted a delicious, dark chocolate and berry variation of this pistachio salad, that if you haven’t tried, you really need to!

This recipe is sure to be a huge hit at potlucks or barbecues, or even at a big game night, like the upcoming Super Bowl!  And although it’s called a salad, it’s almost good enough to be considered a dessert.  But you can consider it a salad for dieting purposes, right?  *Wink, wink*

Okay, so pretending pistachio salad is a diet food might be stretching things a bit, and this wouldn’t be considered healthy, but it is still quite delicious.  And you always need recipes for cheat days, anyway, right?

The best thing about pistachio salad is that you can keep the ingredients on hand so you’re ready any time you get asked at the last minute to bring a dish.  Keep an extra container of whipped topping in your freezer, and keep the pineapples and pudding mix in your pantry, and you’re always set to make a super easy side dish!

Pistachio Salad

Pistachio Salad
Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 20 oz. canned pineapple tidbits, undrained
  • 3.4 oz. instant pistachio pudding mix
  • 16 oz. whipped topping, thawed

Instructions

  1. In a medium bowl, stir together undrained pineapple and instant pudding mix.  Stir until well mixed.
  2. Fold in whipped topping.
  3. Refrigerate for at least an hour before serving.
