Berry Salad incorporates deliciously sweet strawberries, dewberries, blackberries or blueberries, and combines them with chicken and spinach for a filling salad recipe!
As Kerry mentioned recently, it’s berry season! {Go check out her Fresh Berry Crumb Pie and Jamie’s Fresh Strawberry Muffins for other great berry recipes} So when I saw this recipe for Strawberry Salad from 4 Little Fergusons, I knew I needed to try it. {If you’ve never read her blog, go check it out! She has great recipes and a whole lot more! And she has 4 kids just like me, which automatically makes her awesome, right?}
A couple weeks ago, we had friends over for lunch after church and I knew it was a great chance to try it out. Since her recipe was just for one, I had to use a lot more of everything and of course made some changes, some of out necessity since my store did not carry the dressing in the recipe. So I bought a Raspberry Vinaigrette and it turned out great!
You could also make your own vinaigrette, like this Orange Poppy Seed Vinaigrette or this Honey Vinaigrette.
When I was able to harvest my first bit of lettuce & salad greens from my garden, I was excited to be able to make the salad again this time just for me. I also tried it with meat this time. And after loving it again, I figured it was time to share this berry salad recipe with you guys.
