Delicious snacking cookies made with Post Honey Bunches of Oats Crunch O's Cereal.

My family was talking about snacks the other day, and the idea of making snacks with breakfast cereal came up. Obviously the most used idea for this is making bars with cereal, but I wanted to try making something different. So I decided to try my hand at making some breakfast cereal cookies for a different snack.
The kids and I headed to Walmart to see what kinds of cereal would be good in cookies. I don't know about you, but sometimes the cereal aisle can be overwhelming! There are so many choices! We love Honey Bunches of Oats cereal for breakfast, and we were surprised to see several new varieties of Post cereals at Walmart, including a fun new Kung Fu Panda Po Power Crunch cereal inspired by the movie!

We decided to try the new Honey Bunches of Oats Crunch O's cereal, which my local Walmart offered in 2 varieties: Honey Crunch O's and Almond Crunch O's. Turning it into a snack seemed like a simple idea. We also grabbed a bag of Berry Colossal Crunch cereal, since we enjoy munching on dry Berry Colossal Crunch for a snack as well.

Coming up with a recipe for breakfast cereal cookies took a little trial and error, but the final product turned out great! My kids loved that the cookies, and they were easy enough for the kids to help bake. And they thought it was hilarious to be eating cereal in cookies!
These breakfast cereal cookies are a great grab-and-go snack, and I loved how easy they were to make. The recipe makes about 2 dozen cookies. If you want more cookies, you can easily double the recipe, especially since the cookies freeze well.





Breakfast Cereal Cookies
Ingredients
- ½ cup butter,, softened
- ½ cup brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups Honey Bunches of Oats Crunch O's cereal
Instructions
- Preheat oven to 350º.
- Cream together butter and sugar.
- Mix in vanilla and egg.
- Stir in flour, soda and salt.
- Fold in Honey Bunches of Oats Crunch O's cereal.
- Spoon by the Tablespoon-full onto a cookie sheet.
- Bake for 8-10 minutes, or until tops are slightly golden and edges are set.
My family loves eating breakfast together. It's a great way to start our day, and I love the variety of cereals Post offers that allow us to enjoy our breakfast together. But even more than that, I love that their cereals are ones that we can enjoy as snacks as well-- like in these delicious cookies!

What a fun idea! The kids have cereal for breakfast every morning (usually the Honey Bunches of Oats Honey Roasted cereal), but I'm always the one running out the door without a bite - it would be great to have a breakfast cookie to enjoy so I'm not hours into the day before I realize I never ate! #client
Oh man, you definitely don't want to skip breakfast! They freeze really well, so whip up a batch and throw them in the freezer, and just grab one or two out each morning!
This is a great way to change things up from an otherwise ordinary everyday breakfast.

I don't usually buy cereal because I try to avoid processed foods, but I love the idea of breakfast cookies. I think my kids will think I have gone crazy if I offer them cookies for breakfast. LOL
