Potatoes are such a versatile food. They fit well in a variety of recipes, and they’re delicious.
Potatoes are a great source of vitamin C, and contain magnesium, potassium, phosphorous, fiber and calcium. I was surprised to find out that a potato actually contains more potassium than a banana! Who knew?
And best of all, the lowly potato is cheap! You can fill your family’s bellies for a very low cost when you add potatoes to the menu.
You may not know it, but we are all from Idaho, here at Coffee With Us 3. I’m pretty sure it’s a requirement that Idahoans like potatoes.
Idaho farmers grow about 13 billion pounds of potatoes per year. Incredible, right?
